Hotel Services

Large hotels usually offer their guests different kinds of services. At the laundry they can have their things washed and pressed. At the dry cleaner’s they can clean their clothes. At the shoes repair shop they can have their shoes mended and polished.

Hotel restaurants have a Room Service department for the guests. Room service is the service of food or beverages in guests’ rooms. The Room Service department works together with the kitchen of the restaurant. Hotels are often judged by the standard of the room service they provide. Five-star hotels provide room service for at least 18 hours of the day, but more often they provide 24-hour service, and that service must at all times be friendly, quick and efficient.

The dishes available for service in rooms are listed on a special room service menu.

The guests can order^

- Breakfast from 6 am to 11 am

- All day dining from 11 am to 11 pm

- A la carte dishes from 7 pm to 10 pm

- Night owl menu from 11 pm to 6 am

Most orders to Room Service are given by telephone. The waiters from the Room Service bring the dishes that were ordered by the guests on trays and trolleys. They usually knock on the door three times and say loudly, “Room Service”. When the door is opened the waiter enters the room and greets the guest. The guest tells where to place the tray or trolley. The waiters usually explain what they have brought, ask to sign the bill, tell the guest to put trays or trolleys outside their rooms in the passage after they have finished their meals.

At a Restaurant

Oleg Semyonov was a guide of the British students group. They were spending some days in Moscow. On the first day of their visit they went sightseeing. This lasted over four hours. When they got back to the hotel they were hungry.

The British students walked into the Moskva Hotel restaurant. They were met by the head waiter who showed them to the table. Then a waiter came up and handed them the menu.

When the menu got round to Oleg he began to study it. The first course offered a choice of hors-d’oevres. Oleg chose a meat salad to be followed by chicken soup. The salad consisted of sliced meat, sliced tomatoes and lettuce. Oleg ordered a mayonnaise for the salad.

For the second course Oleg decided upon beefsteak. For vegetables he chose potatoes and peas.

The waiter soon brought their meal and they enjoyed it very much. When they finished the waiter cleared the table and gave the menu to them to choose their dessert. Oleg ordered ice-cream and coffee. Some of them ordered tea with lemon.

“Would you like separate bills or one common bill for all?”

“Separate bills, please”

When they finished eating the waiter brought them their bills.

English Meals

Breakfast in a British hotel is a large meal. It usually begins with a choice of fruit juice, porridge or cereal. Then comes the main course with a choice of bacon and eggs, bacon and sausage, poached egg, scrambled egg, or fish. Finally there is toast and marmalade. You may choose tea or coffee to drink, though in cheaper hotels you may be offered only tea. In more expensive hotels there is more choice at each stage.

Lunch in a simple hotel begins with soup, though in a more expensive one you usually have a choice of soup, fruit juice, or hors d’oeuvres. For the main course there are main choices: cold meat and salad, fish, or roast meat and two vegetables. Then there is a choice of sweets, such as hot apple tart, a hot milk pudding, cold fruit salad, or ice-cream. If you wish to finish with coffee you must pay for extra. At about five o’clock there is a very light meal called tea. This consist of tea and a cake.

In England “everything stops for tea”. In the train you are sure of being able to get it, in the car you carry it in a flask. Even at theatre and cinema matinees, during the interval, usherettes move about carrying trays laden with cups and teapots.

Finally in the city offices, as if by ritual, twice a day, about eleven o’clock and at four – steaming cups of tea.

Dinner in a hotel is very similar to lunch, except that there is usually more choice and it is nearly always dearer. In an expensive hotel there is also often an extra fish course before the main course.

The ABC of Table Manners

1. Do not attract undue attention to yourself in public.

2. When eating take as much as you want, but eat as much as you take.

3. Do not eat fast or too slowly, cut as you eat.

4. Take a little of every dish that is offered to you.

5. Sit up straight and face the table, do not put your elbows on the table while eating.

6. Do not reach across the table – simply say: “Would you, please, pass the salt”, etc.

7. At a small party do not start eating unless all are served. At a large party it is not necessary to wait for all. The hostess gives a signal to her guests by saying: “Start eating, please”.

8. There is no rule about eating everything on your plate, to indicate that you have had enough place the knife and the fork together, not criss-cross.

9. When refusing a dish or a helping simply say: “No, thank, you”, when accepting – “Yes, please”.

10. Do not leave the spoon in your cup, when drinking tea or coffee.

11. Do not empty your glass too quickly – it will be promptly refilled.
